French Toast

Ingredients

  • 5 slices of bread
  • 1/4 teaspoon of nutmeg
  • 1 teaspoon of cinnamon
  • 2 tablespoons of sugar
  • 1 egg
  • 1/4 cup of almond milk
  • 1/2 teaspoon of vanilla

Directions

  • mix together cinnamon, sugar, and nutmeg. set aside.
  • mix egg, milk, and vanilla in bowl then add the sugar mixture
  • pour mixture into a pie pan
  • dip bread in mixture on each side
  • cook in pan 2-3 minutes on each side

we added some whipped cream and syrup to make the french toast even better!

Vegetable and Sausage scrambled eggs

Ingredients

  • 2 eggs
  • 1/4 cup of spinach
  • 1 tablespoon of chopped tomatoes
  • 1 tablespoon of chopped onions
  • 1 sausage
  • 1 tablespoon of almond milk

Directions

  • combine egg and milk in bowl and mix
  • cook sausage in separate pan
  • butter pan and add eggs. cook for 2 minutes
  • add spinach, onions, tomatoes, and sausage. cook for 4-5 minutes

Oatmeal Pancakes (Dairy Free)

Ingredients

  • 1 1/2 cups of almond milk
  • 1 1/2 cup of flour
  • 1 tablespoon vegetable oil
  • 1/2 cup of uncooked oats
  • 1 egg
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt


Directions

  • add flour, oats, baking powder, and salt into a bowl. mix
  • add milk, vegetable oil, and egg into a bowl. mix
  • add the dry ingredients and the wet ingredients together. mix well
  • use an ice cream scooper to scoop the batter into a pan
  • cook each side for three minutes

Avocado Toast with an egg

Ingredients

  • 1 avocado
  • salt
  • pepper
  • 2 slices of multi grain bread
  • 1 slice of lemon
  • 2 eggs
  • 1/4 stick of unsalted butter
  • olive oil

Directions

Toast

  • slice avocado into thin slices
  • toast bread in toaster until golden brown
  • once out of toaster, put avocado onto bread. Pack avocado onto bread. 
  • squeeze lemon onto slices. put salt and pepper on toast. drizzle olive oil on top.

Egg (fried)

  • melt two slices of butter onto pan
  • crack eggs into individual bowls. place them side by side in pan.
  • cook for one minute (until outer edges are not clear)
  • put lid on top of pan and cook for 4-5 minutes (medium low)
  • place egg on top of bread
  • put salt and pepper on top

Egg (over easy)

  • butter pan
  • crack eggs into individual bowls. place them side by side in pan
  • cook until whites are firm and yolk is hard but still runny
  • place egg on top of bread
  • put salt and pepper on top

Peanut Butter and Granola Wrap

Ingredients

  • 1 flour tortilla
  • enough peanut butter to cover flour tortilla (i use green wise crunchy peanut butter)
  • 4 apple slices
  • 1/2 of a bannana
  • 1/4 cup of granola
  • 1 teaspoon of honey
  • cinnamon

Directions

  • cover tortilla with peanut butter
  • cut apple into slices and place on one side of tortilla
  • cut banana into slices and place on other side of tortilla
  • put granola between the fruits
  • drizzle honey over tortilla and put cinnamon over tortilla
  • roll tortilla into a burrito
  • cut into small pieces (use toothpick to hold if pieces fall)
